When grilling isn’t an option and the season for sweet summer corn on the cob is over. This Easy Skillet Roasted Corn Recipe is a great option for fresh corn on the cob, frozen corn or canned corn. Make this versatile recipe and create a lot of delicious dishes. Perfect for sprinkling over salad, in a salsa or just as a side dish. NOTE: For best results, use a cast iron skillet but any skillet will work. Look below for how you can change up this recipe and give it a Mexican flare or a little extra flavor.

  • fresh corn on the cob, canned corn, or frozen corn
  • olive oil or vegetable oil
  • salt
  • black pepper

PAN ROASTED CORN INSTRUCTIONS

  1. Add thawed frozen corn, fresh corn kernels, or canned corn drained, to a cast-iron skillet. TIP: For bests results add to a hot skillet.
  2. Pour enough oil in the pan to coat the corn, sprinkle salt and pepper.
  3. Cook corn on high heat, pan fry the corn until dark bits form.
  4. The amount of dark bits determines how strong the smokey flavor will be.

THE DARK BITS: The dark bits are where the smoky flavor is stored. You get to decide how many dark bits. Depending on how long the corn is cooked depends on the flavor and dark bits. Looks below for easy side dish ideas using the roasted corn.

  • HOMEMADE FIESTA CORN: Add green bell pepper, onion and a dash of chili powder to give your roasted corn more of a Mexican corn taste.
  • CORNBREAD: Add this smoky corn to a batch of cornbread batter.

  • SPICY CORN: Add a punch of spice to your roasted corn with chipotle chili powder, or enhance the smoky flavor even more with chopped chipotle peppers
  • BUTTER CORN: Once the corn is done cooking, add a good helping of butter. For a fantastic buttery flavor.
  • BACON GREASE: Add the flavor of bacon to your corn with a tablespoon of bacon drippings and bacon pieces.
  • MEXICAN STREET CORN: Add to this delicious side dish, sour cream, crumbled cotija cheese, garlic powder or garlic cloves (chopped), lime juice, fresh cilantro, and tajin.

HOW TO MAKE ROASTED CREAMED STYLE CORN

ROASTED CREAMED CORN INGREDIENT LIST

  • 5 cups pan roasted corn (frozen, canned, or fresh)
  • 1 small onion, diced
  • 3 tablespoons unsalted butter
  • 2 tablespoons all-purpose flour
  • 1¼ cup milk
  • ¾ cup heavy cream
  • 2 teaspoons white sugar
  • optional 2 sprig of fresh thyme
  • salt and pepper to taste

ROASTED CREAMED CORN INSTRUCTIONS

  1. To a large skillet, combine onion and butter and cook over medium heat until the onion is translucent, about 4 minutes.
  2. Add flour, salt, and pepper. Cook 2-3 minutes while stirring. Add corn and mix well.
  3. Add in milk, cream, sugar, and thyme.Stir over medium heat until mixture comes to a boil and thickens. Allow to boil 1 minute while stirring.
  4. Remove 1 cup of the corn mixture and blend with a hand mixer until smooth. Stir back into the creamed corn.
  5. Taste and season with salt and pepper.
