Is there something wrong with Greek yogurt? Why do you say it's "an ecological nightmare"? What does that even mean???

As I understand- in the US they differentiate between the seed and the leaf. Cilantro is the green leaf/stem and coriander is the seed- whole or ground. Correct me if I'm wrong someone!

I roasted some red onion rings, too, and added a tiny bit of tahini to the yogurt mixture. It was unbelievably delicious.

Recipe for cream fraiche:1 cup whipping cream1/2 cup whole fat sour creamI use a pint jar, pour in the whipping cream then add the sour cream. Stir until mixed thoroughly. Place in a warm place, let set for 12 to 24 hours. You will know it is ready when the mixture has thickened (think the texture of a mixture that must be spooned, not poured to use).If you have any left over it is delicious smeared thickly on toasted bread then spread fruit preserves or marmalade. Deliciousness!

Made this almost as written with the exception of double the cilantro in the sauce and a bit more lime juice. I found this entirely delicious and now I'll have to think up some more things that will suit it as an accompanying main dish!

Wow. This was so good!! I didn't use salted peanuts but they still added the perfect crunch. Don't skip the squeeze of lime juice on top. The brightness of lime is a perfect addition. Yum X20.

I made this with dill along with the cilantro on my second try of this dish, and loved it. I also agree about extra lime juice.

Yes roasted carrots are good but using them as their spoon for a limey herby yogurt dip? Woah. Didn’t have peanuts. Didn’t miss them. Believe it or not have never halved carrots to roast them and I’m never going back!

Just made this for lunch for 3, using spiralized big fat carrots. I think they took about 12 minutes to roast. Served with pita crisps and honey-lime-ginger-Lipton hot tea, giant oatmeal raisin cookies for dessert. Nothing left over.Spur-of-the-moment decision and I had no cilantro on hand, and only had honey-roasted peanuts. All in all, it turned out quite good, and I'll be making this as written next Sunday to serve with either pork or lamb roast.

25-30 minutes in the oven is on the low side. Most likely you will need to 5 to 10 minutes longer depending upon how small you cut the carrots.I used non-fat Greek Yogurt instead of full fat and the dish still tastes great. I found that I needed more than cup to truly coat the carrots.

This was very good, quick and easy to assemble. I used chat masala in place of coriander for punchiness and added sliced jalapeño to the yogurt for heat along with a pinch of za’atar. Ate it for brunch with a round of toasted flatbread. Sublime.

Delicious - carrots had great texture, sauce comes together quickly. Easy enough for a weeknight, but would be an elevated addition for a dinner party.

For the yogurt... use 3/4 tsp coriander. Add 1/2 tsp. cumin. Add 1/2 tsp garlic powder. Double lemon juice (or more for taste, I like it tangy). I added a splash of hot sauce. Perfection.

I don't know why you would have to use "greek yogurt." To avoid diary, I always use yogurt made with almond milk. It's delicious and avoids pain to mother cows.

So delicious; we love roasted veggies, but these are a fave now. Husband asked for these again mere days after the first batch. Next time I will make lots of extra so we have leftovers for more than half a day.We don’t usually keep Greek yogurt in the fridge but we always have labneh (for Turkish eggs HELLO and dishes like this)… and the labneh works beautifully here. Peanuts or almonds are interchangeable in our opinion and don’t need to be dressed up much if you’re in a hurry.

Approximated by mixing a little Trader Joe's Chimichurri sauce (plus red pepper flakes) into the yogurt- easy & works great! Yes on the peanuts. 2 pounds of carrots all snatched up by 7 people.

Very easy, delicious, and visually impressive. Also vegetarian and gluten free. I will be serving this to guests for the foreseeable future.

Love this dish. Subbed some harissa for the Aleppo pepper, and lemon balm for the scallions. Amount of coriander was right for both pieces, though my tsp measures were a little full bc I love it! Most importantly, kids aged 10 and 12 ate it and would eat again (though they didn't like the caramelized bits of carrots at the tips).

I've made this half a dozen times since I discovered it a few weeks ago. Cooked carrots are generally not my favorite, but this is an unreal recipe with such amazing flavors. After the first couple times following the recipe exactly, I now add a couple tablespoons of toasted whole coriander seeds to the yogurt, and skip the peanuts, since I don't usually have them on hand. Also, I'm vegan, so I use my favorite dairy free yogurt (kite hill plain unsweetened).
