As a food blogger, I sometimes try too hard to come up with fun recipes to share! While I love doing it, sometimes I think it is helpful to share the recipes we are actually eating every day.
Like all working moms, I don’t alwaysalmost never have time to cook something fancy. Sometimes we take a easy quesadilla and make it healthy with simple additions! Let me show you what I mean…
Pretentious Quesadilla
All ingredients for the quesadilla above can be found at Trader Joes.
I start with a Whole Wheat tortilla in a pan. Sprinkle half with some cheese (we use dairy free) and flax seeds then fold the other half over the top. Cover and cook on both sides until the cheese in melted and the tortilla is browned. Top it with tomatoes, avocado and micro greens. This is EASILY one of my favorite fast lunches.
Superfly Avocado Toast
I can hear you now…Again with the microgreens?Well, yes! They are delicious and so good for you! Microgreens contain more nutrients than their grown-up vegetable!
But back to the food 🙂 This is super easy! Just take a piece of toast, smash an avocado over it, add microgreens and sprinkle with Chia Seeds. Sprinkle with salt and pepper. If you have time, add a fried egg on top!
Plain Jane Turkey Wrap
There is nothing fancy about this one, except that the kids will devour it!
I take a whole wheat tortilla, spread hummus over the whole tortilla, sprinkle with ground flax seeds, add some nitrate free turkey slices (thanks Costco!) add spinach and wrap it up! Sometimes I will replace the hummus with pesto if I’m feeling daring!
Picked Cucumbers – Don’t worry, it’s delicious!
So easy and delicious. This one needs to be done by taste, so just keep tasting as you go. You can’t go wrong.
Slice cucumbers and place in a container. Add lemon juice, salt, apple cider vinegar and chopped dill. Let it sit in the fridge overnight or longer. The softer the cucumbers, the better!
Bananas On A Log
Sweet potato toast recipes were all the rage for a short while. I tried a few different variations but I didn’t love them. Until I added Almond butter and Honey. Yum!!
Just thinly slice the sweet potatoes and put them in a toaster until they are cooked. It doesn’t take long. While still warm, add Almond Butter and Drizzle with honey and sprinkle with cinnamon. So good!
The Accidental Favorite
My son had to eliminate Wheat, dairy, and eggs for 8 weeks. So we were at a loss on what to feed him for breakfast while sticking to clean eating.
I picked up some organic rice cakes because I figured he could eat tuna on it. But one morning we decided to try adding natural peanut butter. It was good but still kind of plain. So we drizzled honey and sprinkled Cocoa Nibs. Perfection!
He can eat wheat again but he still wants this delicious treat! BTW, cocoa nibs are dairy free. They are so bitter that they need the sweetness of the honey!
Fancy Pants Tacos
Ok, sprouts again, but take a close look and you will see that these are a different kind of sprout. Variety is the spice of life!
These tacos are another favorite in our house because you can use leftover taco meat and put it together in just minutes. Take a corn tortilla and toast it on the stove (in a pan if you don’t have a gas stove). Then add sprouts, taco meat, and salsa or siracha. Done!
Wire Rack Taco Shells
These taco shells were made by taking corn tortillas and placing them over 2 bars in the oven.
I turned on the convection oven and cooked them at 375 for about 6 minutes. Delicious, crunchy and healthy!
Sky High Caprese
I LOVE Caprese! I love it with just tomatoes and mozzarella and I love it with eggplants. If you are BBQ-ing, cook the eggplants on the grill.
You could also spread olive oil on the slices and bake in the oven until soft and cooked through. Then layer it with fresh tomato and mozzarella slices. Drizzle with olive oil and balsamic vinegar.
Sprinkle with salt and chopped fresh basil. Mmmm, I think I’ll make this tonight too!
Healthy Dinner for Lazy People
Hey, I’m not judging! This is one of my favorite clean eating dinners to make! I buy some extra chicken sausages when I order from Crowd Cowand keep them in the freezer for lazy nights.
Chop the sausages into bite-sized pieces and pan fry until brown. In the meantime, chop any vegetables you have on hand. Truly, any vegetables will work with this one.
Add the veggies to the pan and saute until cooked. Serve with brown rice or quinoaand you’ve got a healthy dinner!
